My dad taught me to hunt mushrooms and I've been foraging for mushrooms ever since. Chanterelles, hedgehog, oyster, lobster, cauliflower and boletes are most common where I am, and the main mushrooms that I pick. I am not confident in picking pine mushrooms, though I know they grow here and morels are much less common on Vancouver island and I've only found a few.
I have a couple of great mushroom knives. I love this Opinel mushroom knife with a brush and they have a super cool camp kitchen set with everything you need to prepare a meal in the forest. Both make great gifts for foragers, too. All that the rain promises and more is my favorite foraging guide, it is quirky and adds humor along with all the important information and photos.

Chanterelle Mushrooms
Fresh cantharellus cibarius mushrooms are such a treat and chanterelles are some of my favorites and easy to forage for. This chanterelle mushroom risotto is my favorite recipe to enjoy them, other than simply pan fried with butter and garlic. It's Latin name is Hericium erinaceus but it's also known as yamabush*take (mountain priest mushroom), bearded tooth fungus, and bearded hedgehog. Maitake aka Hen Of The Woods
